Ah, February. The month of chocolate, hearts, and red dye #40. Not to mention all the single-shaming and pressure to be in a relationship! I'm declaring this the month of SELF love. Whether you're single or with a partner, you are deserving of love just as you are. This thought process inspired me to create a Valentine's cocktail shoot without ANY red. We chose a gorgeous color palette of lilacs, dusty pinks, lavenders and whites. The single glass highlights the fact that you don't need another person to be worthy of love - or fancy cocktails!
This simple champagne cocktail is perfectly light and balanced without being too sweet. While it's crazy easy to make, it's packed with flavor! It looks and tastes like an adult pink lemonade. Let's talk about WHY this drink is so easy to make - Backyard Soda Lavender Lemon CBD Simple Syrup. Backyard Soda Co is a Colorado company that makes delicious CBD-infused sodas and simple syrups. They only use fresh, local and organic ingredients - like the whole Colorado lavender flowers in the syrup we're using for this cocktail! If I didn't have this simple syrup, I'd have to go get:
put them all in a pot, boil, constantly stir, strain, then wait for it to cool all before using it! I'm sure I'll have to make custom syrups in the future, but for lavender lemon I'll stick with Backyard.
Dried lavender or other flower for garnish
Mix juice from half a lemon with 2 oz of the cold syrup in a shaker
Add ice, shake and strain into a champagne coupe
Top with 6-8 oz. of sparkling rosé
Garnish with fresh lavender stem
